Not only for Easter: steamed lemon pudding from Varoma (Thermomix-Thursday)
Today is Thermomix Thursday and here too Bine dedicates something of her own, Zorra von kochtopf, Simone von S-Küche, Marsha von A pinch of yummy and I look at the topic Ostern . Already last week I have given you various suggestions and there already the recipe for a great eggnog from the Thermomix and a Lemon Curd from the Thermomix. That's why it's not going to be classically Easterly - the recipe for the steamed lemon pudding from the Varoma is suitable for many occasions.
So for both the Easter coffee table and the Sunday brunch or the Dessert after a dinner. I love small desserts in the glass and often you have to cook crème brûlée & Co. in a water bath in the oven. However, the waterbath and the oven can easily be saved by using the Varoma!
Steaming in Varoma - Also for Cakes and Puddings
I'm still a big fan of steaming in Varoma. In addition to cheesecake and my last year's Thermomix Easter Recipe, the hearty asparagus cheesecake, this is also surprisingly good with smaller molds. And steamed pudding is extremely popular in England and Australia. I still had plenty of lemons at home and therefore needed an idea for processing. Pudding may seem a bit misleading as a name here, but it's best suited to the consistency. It is not a creamy lemon cream, but firm and good spoonable. However, the mass is not cooked like a pudding, but cooked only in the molds in Varoma under steam.
Lemon Pudding in Small Tins
Steaming sweet pudding or even cakes in Varoma is pretty straightforward. You only need a good, heat-resistant cling film. The must be wrapped tightly around the molds. There must be no dripping water during cooking in the molds. As molds here are either classic ramequins or glass containers, as you often know of desserts from the refrigerated shelf.
Varoma Lemon Pudding
- 3 fresh organic eggs (size L)
- 1 pinch of salt
- 50 g soft butter, plus butter for greasing
200 g of sugar
- grated peel and juice of 4 untreated lemons
- 30 g of flour
- 200g whole milk
- sprinkle some powdered sugar
Separate the eggs. Put the egg whites in the mix pot with 1 pinch of salt. Insert the butterfly and beat the egg white 4 minutes/4 to stiff egg whites.Stir for 3 minutes/step 3, gradually adding the egg yolk through the lid opening. Submix well. Remove butterfly.
Add lemon zest, lemon juice and flour and mix for 15 seconds/step 3. Add milk to the mix pot and stir again for 15 seconds/step 3.
Briefly rinse the Mixtopf. Add 1.5 l of hot water, put on the Varoma and steam the lemon pudding for 40 minutes/Varoma/Stage 1.
Remove Cling Film and sprinkle the lemon pudding with icing sugar as you like. Serve lukewarm or chilled.
The Lemon pudding also lasts well for a few days in the fridge and can be warmed up slightly in the microwave.
